MY SISTER'S CHICKEN ALBERGHETTI 
2 halved boned chicken breasts
2 eggs
2/3 c. dry bread crumbs
4 tbsp. butter, melted
1/4 c. cream
2 c. marinara sauce (prepared or make own)
4 thin slices Mozzarella cheese
1/2 c. grated Parmesan cheese

Pound chicken until flat. Beat eggs and dip chicken in it; roll in bread crumbs. Fry in butter until golden brown. Place on paper towel. Line serving platter with marinara sauce that has been slightly diluted with cream. Place hot chicken on sauce and cover with slices of Swiss and Mozzarella cheese. Sprinkle with Parmesan. Cook about 45 minutes at 350 degrees.

MARINARA SAUCE:

1/2 c. olive oil
2 minced garlic cloves
3 tbsp. chopped parsley
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
2 lbs. tomatoes, peeled and chopped

For homemade marinara sauce: saute garlic 5 minutes in oil, add tomatoes, parsley and spices. Cook 30 minutes over low heat. For a smooth sauce puree in an electric blender. Serves 4.
