ROAST TENDERLOIN OF BEEF WITH
HORSERADISH
 
4 lb. beef tenderloin
1 1/2 c. beer
1/2 c. oil
2 cloves, garlic, minced
Salt and pepper to taste
Horseradish sauce (recipe follows)

Combine all ingredients except tenderloin. Place tenderloin in pan, cover with marinade and refrigerate about 4 hours. Grill over hot coals for 12 minutes on each side. Serve with horseradish sauce. Serves 6-8.

HORSERADISH SAUCE:

1 c. sour cream
1 tbsp. onion, grated
1 1/2 tbsp. Dijon mustard
3 tsp. prepared horseradish

Combine all ingredients and chill until ready to serve.
