FOOL - PROOF TEXAS FAJITAS 
Skirt steak
Beer
Italian dressing
Picante sauce
Bar-B-Que sauce

Trim skirt steak of excess fat and cut into approximately 6-inch long pieces. Marinate overnight in mixture of 1/2 beer and 1/2 Italian dressing, turning meat at least once. Sear steak on hot grill for about 5 minutes each side.

Cook with mixture of 1/2 picante sauce and 1/2 bar-b-que sauce. Cook for a few additional minutes to desired wellness. (This meat tends to taste the best for fajitas if slightly pink.)
