MEXICAN CORNBREAD | |
1 lb. ground beef, cooked & drained well 1 1/8 c. yellow cornmeal 1/2 tsp. baking soda 2 eggs 1 c. milk 3/4 tsp. salt 1/2 c. bacon drippings 1 #2 can cream style corn 1 sm. can green chilies, chopped or 4 jalapeno peppers, chopped 1/2 lb. longhorn Cheddar cheese, grated 1 lg. onion, chopped Mix 1 cup cornmeal and soda in bowl. Add the eggs, salt, milk, corn and bacon drippings (softened) and mix well. Place remaining cornmeal in a greased pan or cast iron skillet (hot) and brown. Pour half the cornbread mixture into the hot skillet and sprinkle beef over mixture evenly. Then layer peppers, cheese and onion. Pour remaining cornbread mixture over onion. Bake at 350 degrees for 45 minutes or until browned well. Cool before serving. |
