OLD FASHIONED SOUTHERN CORN
PUDDING
 
5 ears fresh corn
3 tbsp. butter, butter or bacon fat
1 med. green pepper, thinly sliced
1/2 c. thinly sliced onion
4 eggs
2 c. milk
1 tbsp. sugar
1 1/2 tsp. salt
1/8 tsp. ground black pepper
2 c. slivered cooked ham or diced chicken, optional

Cut corn from cobs and set aside. In large skillet, melt butter. Add corn, green pepper and onion; saute 3 minutes. Remove from heat and set aside.

In large bowl, lightly beat eggs. Stir in milk, sugar, salt and pepper. Stir in corn mixture and ham.

Pour into buttered 1 1/2 quart casserole. Stand casserole in large shallow pan. Bake in a preheated 325 degree oven until a knife inserted in center comes out clean, 40-50 minutes. Serve immediately. Makes 6 portions.
