SQUIRREL SKILLET PIE | |
1 lg. squirrel 1/2 c. diced green peppers 1/4 c. flour 1/2 c. chopped onions 1/4 c. chopped celery 1/2 stick butter 1 tube homestyle biscuits Salt and pepper Cut square into pieces. Place in pan along with celery a pinch of salt and pepper and enough water to cover meat. Place on burner and simmer until tender. Cool. Strip meat from bones, save broth. Melt butter in iron frying pan, saute green peppers and onions. add flour and enough broth to make gravy. Add meat, cook on low until gravy thickens. Add biscuits to the top. Place in oven at 425 degrees and bake for 8-10 minutes or until biscuits are golden brown. Serves 4. |
