SICILIAN POTATOES | |
8 med. potatoes, peeled 3/4 c. olive oil 1 tsp. black pepper 1 tbsp. salt 1 tbsp. garlic powder 2 tbsp. oregano, crushed 1 c. Parmesan cheese, grated 2 tbsp. paprika Slice potatoes in half lengthwise. Pour oil into a bowl and add potatoes cut side up on a generously greased cookie sheet. Mix together pepper, salt, and garlic powder and sprinkle over potatoes. Next, sprinkle oregano, Parmesan cheese and paprika over potatoes. Bake at 350 for about 1 hour or until potatoes are brown and soft when pierced with fork. If potatoes begin to brown before they are tender, turn over with spatula. |
