PAUL BUNYAN'S CHILI | |
2 large onions, chopped 1 green pepper, chopped 1 clove garlic, minced 1/2 c. vegetable oil 2 lbs. ground beef 2 (16 oz.) cans red kidney beans 1 (16 oz.) can tomatoes 1 (8 oz.) can tomato sauce 1 1/2 tsp. salt 2 tbsp. chili powder, or to taste 1/2 tsp. crushed red pepper 3/4 tsp. oregano Dash paprika Dash cayenne In a large skillet, saute onion, green pepper and garlic in oil until tender. Add ground beef and brown. Drain off fat. Drain kidney beans and reserve syrup. Add beans, tomatoes, tomato sauce and seasonings to beef mixture. Simmer 1 1/2 hours covered. If mixture becomes dry, add reserved bean liquid. |
