2 1/2-3 lb. chuck roast 1 lg. chopped onion 1/2 c. diced celery 2 tbsp. vinegar 2 1/2 tbsp. brown sugar 4 tbsp. lemon juice 1 c. catsup 1 1/2 tsp. Worcestershire sauce 1 tsp. chili powder 1 1/2 c. water Place raw beef in roaster. Lay celery and onion on top. Mix rest of ingredients together and pour over meat. Bake in 350 degree oven for 1 hour, covered. Turn meat. Bake in 350 degree oven approximately 1-1 1/2 hours or until tender and falling apart. Pull meat apart, throwing away at and bone. Add shredded meat back to juice. Salt and pepper to taste. Makes enough meat for 10 sandwiches. |
