REUBEN CASSEROLE 
8-10 slices rye bread, cubed
1 c. sour cream
1 sm. onion, chopped
1 (16 oz.) can sauerkraut, drained
1 can corned beef, chopped
6-8 oz. Swiss cheese, shredded
6-8 oz. Mozzarella cheese, shredded
1 stick butter, melted

Put 1/2 of bread cubes in bottom of 1 (10x8 inch) casserole. Combine sour cream with chopped onions. Spread sour cream mixture over bread cubes. Next, layer drained sauerkraut, then corned beef. Next layer the two cheeses and top with remaining bread cubes. Drizzle melted butter over the top. Bake at 300 degrees until heated through and onion is done, about 30-35 minutes.
