LOW CALORIE STRAWBERRY JAM 
3/4 - 1 c. fresh fruit, cubed
1/2 tsp. lemon juice
1/8 - 1/4 c. apple juice (depends on how sweet or tart the fruit is)
1/2 - 1 tsp. fructose or sugar substitute
2 tsp. Knox gelatin

Mix all the ingredients together and cook for 3 to 4 minutes on high heat. Taste the jam at this point and add more sugar substitute if it's a little tart. Then sprinkle 1 to 2 teaspoons of Knox gelatin over it; stir until gelatin is completely dissolved to make it firm. The taste is great the only calories are mostly from the fruit.

NOTE: You may use whatever fruit is in season, peaches, grapes and plums are great too. Make one batch at a time and will keep in the refrigerator for several weeks.
