SHERRY - BAKED SHRIMP 
1 lb. med. shrimp
1 c. sliced mushrooms
1/2 c. olive oil
3 tbsp. dry sherry
2 cloves garlic, minced
1/2 tsp. thyme
1/8 tsp. red pepper

Arrange shrimp and mushrooms in a shallow baking dish. Mix remaining ingredients and pour over shrimp. Bake in a preheated 400 degree oven, turning once for 8 minutes or until shrimp are barely opaque throughout. Serve over rice. Serves four.
