CHICKEN BAKED IN SHERRY 
2 (2 lb.) chickens, cut in pieces
1/4 lb. butter
1 lg. onion, sliced
1/2 c. sherry
1/2 c. tomato juice
1 tsp. paprika
1 tsp. salt
1 c. water
Pepper

Melt butter in a frying pan. Add chicken and braise until light brown. Remove chicken and place in a baking pan large enough to cook chicken in layer. Add onion. Mix remaining ingredients and pour over chicken. Bake at 400 degrees for one hour and 15 minutes, turning chicken once at about 45 minutes. Good served with baked potatoes. Serves 8.
