PECAN DELIGHT | |
1 stick butter 1 sm. pkg. cream cheese 1 c. flour 1 tbsp. sugar Pinch of salt Beat the butter with cream cheese in a bowl until fluffy. Add the flour, sugar and salt and mix well. Shape into small balls and press into muffin tins. PECAN FILLING: 2 tbsp. melted butter 1 1/2 c. (packed) light brown sugar 2 eggs, slightly beaten 1 tbsp. vanilla 1 c. chopped pecans Pour the butter over brown sugar in a mixing bowl. Add the eggs, vanilla and pecans and mix well. Pour into pastry in muffin tins. Bake at 350 degrees for 15 minutes. Reduce temperature to 250 degrees and bake 15 minutes longer. 12 servings. |
