BLACKBERRY PUDDING 
1/2 c. butter
1 1/2 c. sugar
2 eggs
1/3 c. milk
2 c. flour
3 tsp. baking powder
1/3 tsp. salt
1 tsp. vanilla
1 qt. blackberries, drained

Cream butter and sugar. Add eggs and beat well. Add sifted dry ingredients alternately with milk. Add vanilla and fold in blackberries.

Melt a little butter in a 9 x 13 inch pan. Pour the mixture in the pan and bake at 375 degrees for about 30 minutes until toothpick inserted in the center comes out clean. Serve with a White Sauce.

WHITE SAUCE:

5 c. milk (divided)
10 tbsp. sugar
5 1/2 tbsp. cornstarch
1/2 tsp. salt
2-3 tsp. vanilla

Heat 4 cups milk. Mix sugar, cornstarch and salt with 1 cup milk. Add to hot milk, stirring constantly until thickened. Stir in vanilla, remove from heat and pour over pudding. May also be used on cobblers and Brown Betty.
