SPINACH QUICHE 
1 unbaked 9 inch pie shell, frozen or homemade
2 (10 oz.) pkgs. frozen chopped spinach
2 eggs, beaten
3/4 c. grated Parmesan cheese
1/4 c. milk
1/3 c. melted butter
1/3 c. chopped onion

Preheat oven to 350 degrees. Prepare spinach according to package directions cooking only 4 minutes. Drain, combine spinach with eggs, cheese, milk, butter and onion. Mix well. Spread mixture in unbaked pie shell. Place on preheated cookies sheet. Bake for 30 minutes at 350 degrees. Cool slightly before serving.

Broccoli or French style green beans could be substituted for spinach.
