CHOCOLATE ZUCCHINI BREAD | |
3 eggs, beaten 1 tsp. butter 1 oz. unsweetened chocolate 1/2 c. oil 1 c. sugar 1 tsp. vanilla 1/2 c. chopped almonds 1 c. finely grated unpeeled zucchini 1/4 tsp. baking powder 1/2 tsp. baking soda 1/2 cinnamon 1 1/2 c. flour 1/2 tsp. salt Over low heat melt butter and chocolate. Combine oil, eggs and sugar, beat well. Stir in vanilla, melted chocolate, almonds and zucchini. Sift together dry ingredients add to zucchini mixture. Pour into greased and floured 9x5 loaf pan. Bake on middle rack of 350 degree oven about 1 hour and 10 minutes or until toothpick test done. Cool in pan 10 minutes. This bread is a nice alternative to fruit cake for a Christmas gift. |
