3 eggs
1 c. salad oil
2 c. grated zucchini
2 oz. baking chocolate, melted
2 c. sugar
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 tsp. cinnamon
1 c. nuts
1/2 c. miniature chocolate chips
3 c. flour

We use 1/2 cup oil and 1/2 cup applesauce.

Beat eggs. Beat in sugar and oil. Stir in chocolate. Add zucchini and vanilla. Stir dry ingredients into flour. Stir into zucchini mixture. Add chopped nuts and chips. Mix. Bake in 2 greased loaf pans for 1 hour at 350 degrees.
