WHEAT BRAN SHORTCAKES 
1 1/2 cups unbleached all-purpose flour
1/2 cup Wheat bran
2 tsp. baking powder
1/2 tsp salt
1/3 cup shortening (Crisco)
3 tbsp. sugar
2/3 cup milk (or milk substitute)
3 tbsp butter, melted

Preheat oven to 425°F.

Mix together flour, wheat bran, baking powder, and salt. Cut up shortening into small cubes and add to flour mixture. Mix together with fingers or using a pastry blender until mixture is like cornmeal in texture. Add sugar and stir in. Add milk and melted butter and stir until combined. Do not overmix.

Divide dough into 6 portions and drop onto a cookie sheet covered with a Silpat or other silicone baking sheet.

Bake at 425°F for 10 to 12 minutes.

Serve with sliced strawberries or peaches sweetened with sugar and topped with whipped cream.
