POTATO-SALMON CROQUETTES 
1 1/2 lbs. cooked potatoes, peeled and finely diced (about 4 cups)
1 (7 1/2 oz.) can salmon, drained, skinned, boned and flaked
1/3 c. finely chopped green pepper
2 tbsp. minced onion
1 egg or 1 egg white lightly beaten
Freshly ground black pepper to taste
Oil for frying

Combine the potatoes, salmon, green pepper, onion, egg or egg white and pepper. Shape this mixture into 12 patties.

Fry the croquettes in a lightly oiled skillet or griddle until they are browned on both sides. 6 servings.
