SALMON CROQUETTES WITH LEMON
SAUCE
 
1 can red or pink salmon
1 c. mashed potato
1 egg, well beaten
Salt and pepper to taste

Mix above ingredients. Shape with croqnetter or ice cream scoop. Roll in fine bread crumbs or cracker crumbs. Deep fat or bake at 350 degrees for 25 minutes.

LEMON SAUCE:

1 c. lemon or orange juice
2 tbsp. cornstarch diluted in 1/4 c. cold water

Bring all ingredients to a rolling boil in saucepan. Cook until sauce is clear. Serve hot over salmon croquettes.
