WEST COAST CHICKEN 
2 tsp. salt
1/4 tsp. black pepper
1 c. thawed orange juice concentrate
1/3 c. butter, melted
2 tsp. ground ginger
4 tsp. soy sauce
5 lbs. chicken thighs, skinned

Combine salt, pepper, orange juice concentrate, butter, ginger and soy sauce. Grease 2 - 11x7 baking pans with vegetable oil. Place chicken in single layer in pan. Baste well with sauce. Cover and refrigerate overnight. Bake, uncovered, at 350 degrees for one hour, basting with sauce once during cooking.

DIABETIC EXCHANGE: 1 serving equals 3 protein, 1 fruit, 1/2 fat. 316 calories, 747 mg. sodium, 96 mg. cholesterol, 20 mg. carbohydrate, 22 gm. protein, 17 gm. fat. Makes 8 servings.
