QUICK "QUICHE LORRAINE" 
1/2 c. evaporated skimmed milk
1 lg. egg, beaten
1 oz. Swiss cheese, shredded
1 tsp. imitation bacon bits
Dash pepper
1 tsp. grated Parmesan cheese

Preheat oven to 350 degrees. Spray 10 ounce custard cup or 1 1/2 cup casserole with non-stick cooking spray and set aside. In small bowl beat together milk and egg; stir in Swiss cheese, bacon bits, and pepper. Pour into sprayed cup (or casserole) and sprinkle with Parmesan cheese; place cup (or casserole) in 8 x 8 x 2 inch baking pan and fill pan with boiling water to a depth of about 1 inch. Bake for 25-30 minutes (until a knife, inserted in center, comes out clean). Remove from water and, keeping warm, let stand for about 5 minutes before serving.
