FRIED EGGPLANT 
1 eggplant
2 eggs
1/2 c. milk
1 1/2 tbsp. sugar
1 c. flour
Dash of pepper
Cooking oil
1 tsp. butter

Slice eggplant into 1/4 inch slices. Soak in salted cold water while making batter of eggs, milk, sugar, flour and pepper. Heat skillet and add oil to about 1/4 inch. Add 1 teaspoon butter to oil. Drain eggplant slices, pat dry, batter and fry.
