PORK CHOPS AND ZUCCHINI PARMESAN | |
3 tbsp. flour 1 1/2 tbsp. Parmesan 1/2 tsp. salt 1/2 tsp. dill weed 1/4 tsp. pepper 6 lean, boneless pork chops 3 med. zucchini, sliced 2 med. onions, sliced Place first 5 ingredients in a paper bag. Bounce the chops in it. Place 1-2 tablespoons oil in a large skillet. Heat oil, then brown the pork on both sides. Spread the sliced onions on top. Add 1/3 cup water, cover and simmer on low for 15 minutes. Then add the sliced zucchini. Sprinkle the whole thing with the remaining flour mixture, to which you have added another 3 tablespoons Parmesan, 1/2 teaspoon paprika and 1/2 teaspoon dill weed. Don't stir it but simmer, covered, for another 25 minutes. |
