BEEF & POTATO CASSEROLE 
4 c. peeled & thinly sliced potatoes (can use left over baked potatoes)
1 tbsp. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 lb. ground beef
1 med. green pepper, chopped
3/4 c. evaporated milk
1/2 c. cracker crumbs
1/2 c. ketchup
1/4 c. chopped onion
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. ketchup (topping)

Arrange potatoes in a greased 2 quart casserole; sprinkle next 3 ingredients over potatoes and set aside. Combine next 8 ingredients, mix lightly and spread meat mixture evenly over potatoes. Spread remaining 1/4 cup ketchup over meat mixture. Bake at 350 degrees for 1 hour and 10 minutes.
