STUFFED JALAPENO PEPPERS | |
2-3 roma tomatoes, de-seeded and finely chopped 1 small red onion, finely chopped 1/4 c. fresh cilantro, finely chopped 1/4 c. shredded Monterey Jack cheese 8-12 jalapeno peppers salt, to taste pepper, to taste olive oil Preheat oven to 400°F. Slit the peppers down the middle and remove the seeds and pith. Combine tomatoes, onion, cilantro and cheese. Add salt and pepper to taste. Stuff the peppers with the tomato mixture. Brush peppers with olive oil and bake for 20 minutes (at 400°F). These can also be grilled. |
