RITSY CARROTS 
2-3 lbs. carrots, sliced, cooked
1/2 - 1 c. butter, melted
1/2 lb. Velveeta, cubed
1 sm. onion, finely chopped
Crushed Ritz crackers

Layer carrots, cheese and onions in 9"x13" pan. Pour melted butter over Ritz crackers. Bake at 350 degrees for 20 to 30 minutes.
