LIGHT CHEESECAKE 
1/3 c. confectioners' sugar
1 1/2 c. graham cracker crumbs
1/4 c. butter
1 c. granulated sugar
3 (8 oz.) pkgs. light cream cheese (I use Kroger)
1 generous tsp. vanilla
4 eggs
1 pt. light dairy sour cream, at room temperature
1 (21 oz.) can prepared pie filling (strawberry)

Reheat oven to 350 degrees. Melt butter. Add to graham cracker crumbs and confectioners' sugar. Line bottom of 9-inch springform pan. Pack firmly. Do not bake yet.

Now combine granulated sugar, eggs, vanilla and cream cheese in another bowl, mixing well. Pour over the crust and pop into the oven for approximately 50 minutes. Do not turn oven off. Remove from oven and top with sour cream and let cheese cake cool.

Top with filling. Refrigerate overnight before removing the sides of springform pan.
