ZUCCHINI SOUP - HOT OR COLD 
2 tbsp. butter
2 shallots, minced
2 tbsp. flour (plain)
2 lbs. zucchini or yellow squash
1 qt. chicken broth
2 tsp. chopped fresh dill
1/2 tsp. sugar
1 c. milk
1 c. heavy cream
Salt to taste
White pepper to taste

Saute shallots and zucchini. Remove from saucepan. Add flour to pan, cook slightly. Do not brown. Add milk, bring to boil. Add all other ingredients. Simmer for 30 minutes.
