PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

Grease and flour 15"x10"x1" jelly roll pan. Mix ingredients and spread on pan. Bake at 375 degrees for 15 minutes. Immediately roll in powdered sugar towel and cool.

CREAM FILLING:

1 c. powdered sugar
4 tbsp. soft butter
2 (3 oz.) pkgs. cream cheese
1/2 tsp. vanilla

Beat until creamy. Spread on cooled jelly roll and re-roll. Chill.
