FRESH BROCCOLI SOUP 
2 tbsp. butter
1/4 c. chopped fresh onion
1 rib celery, chopped
1 bunch fresh broccoli
2 c. beef bouillon
1/8 tsp. hot pepper sauce
1 c. light cream

Melt butter in medium saucepan, add onion and celery and cook until tender. Wash and trim broccoli, remove leaves and cut into small pieces. Add broccoli, beef bouillon and hot pepper sauce to saucepan. Bring to a boil, cover and cook over medium heat for 25 minutes.

Puree in electric blender or food mill. Return to saucepan, add cream and heat. Makes 1 quart. 4 to 6 servings.
