SHISH KEBABS 
5-7 lb. leg lamb (have butcher cut into cubes)
1/4 lb. butter
1/2 c. olive oil
1 c. fresh lemon juice
2 tbsp. oregano
1/2 tsp. pepper
10-12 med. tomatoes, quartered
5-6 med. onions, quartered and separated
5-6 green peppers, cut into 2-inch pieces

Place lamb cubes in a deep bowl. Melt butter with oil, lemon, oregano and pepper. Pour over lamb cubes. Marinate 4-5 hours or overnight. Skewer lamb, onions, tomatoes and peppers. Broil or cook on grill. Baste constantly with marinade. Turn skewers frequently. Serve with rice and salad. 8 servings.
