LEMON ICE BOX PUDDING | |
1 c. water 1 env. unflavored gelatin 4 eggs, separated 1 1/4 c. sugar 2 lemons 1/2 pt. whipping cream or 8 oz. Cool Whip 24 square graham crackers 6 tbsp. butter, melted Make graham cracker crust by crushing crackers to measure 1 1/2 cups. Combine 1 1/4 cups crumbs, 1/4 cup sugar and butter. Mix together well and press into a 9"x13" pan. Mix water and gelatin together; let stand. Beat together 4 egg yolks and 1/2 cup sugar. Add grated rind of 1 lemon and juice of 2 lemons. Cook yolks, sugar, rind and juice in large enough saucepan until creamy. Put together gelatin mixture and creamy mixture, mix and set aside to cool. |
