RICE PORCUPINES | |
1 lb. ground beef 1/2 c. uncooked rice 1 tsp. pepper 1 tsp. salt 1/2 med. onion, sliced thin 1/2 green pepper, sliced thin Dash of chili powder 1 tbsp. fat 2 1/2 c. tomato juice Mix ground beef and rice, uncooked, salt and pepper together. Add dash of chili powder and mix together. Form in balls about 1 1/2" in diameter. Place in covered baking dish. Then in skillet, melt the 1 tablespoon fat. Saute onion and green peppers, tomato juice in this pour over "porcupines-to-be" and place in a 350 degree oven and cook rice for 1 1/4 hours. They are done when the visible rice is tender. Rice shows through like porcupines. Serve with additional tomato juice. Makes 8 servings. |
