BATTER DIP FISH 
1/4 c. flour
1/2 tsp. salt
1 tbsp. shortening, melted
1 egg white, stiffly beaten
1/4 c. flour
1 egg yolk
2 tbsp. water

Combine flour and salt. Add egg yolk, water and shortening; stir until batter is smooth. Fold in egg white. Dip fish (your choice) in 1/4 cup flour, then into batter. Fry in deep shortening heating to 375 degrees. Cook until brown.
