CITRUS RICH APPLESAUCE | |
8 medium apples, cored and cut up, optionally peeled 1 medium orange, peeled, cut up, and seeded 1 medium grapefruit, peeled, cut up, and seeded 1/3 cup sugar 1/4 cup hot cinnamon candies 1 teaspoon salt water, if needed In blender, in two batches, puree half the apple pieces, the pieces of one of the citrus fruits, and if needed, enough water to enable a puree to form. Turn into 3 quart or bigger saucepan. Stir in sugar, candies, and salt. Bring gently to a boil, stirring until candies have dissolved. Reduce heat to very low, cover pan, and simmer for half an hour, stirring occasionally. Transfer to boiling heat resistant and refrigerator suitable covered container. Refrigerate till cold or cool as desired. Serve as a side dish or topping. Should keep a week refrigerated as long as it doesn't mold or get an off flavor or odor. The pureed citrus fruits will add a distinctive rich flavor and tang to the applesauce without being overpoweringly sour. Measurements and times are approximate and not important except that the applesauce cooks into a proper "applesaucey" consistency. This is supposed to be applesauce, not apple butter or juice.
