ZUCCHINI LASAGNA 
2 med. zucchini
2 lbs. loose sausage or ground chuck
1 med. onion, sliced
3 c. cooked rice
1 (19 oz.) can herb tomato sauce or Italian tomato sauce
1/2 c. Mozzarella

Saute meat; mix meat and cooked rice; cut zucchini in 1/4 inch slices. Saute zucchini until soft; layer some zucchini in pan; sprinkle meat, onions, and cheese; pour sauce over; repeat layers until ingredients are gone. Cover; cook 30 minutes at 350 degrees.
