LIGHTHOUSE FLOUNDER 
1 1/2 lbs. flounder (or other fish fillet) cut into 1 1/2 inch strips
1 lb. backfin crab meat
1/2 c. dry bread crumbs
4 c. Newburg sauce
Salt
Paprika
1/4 c. butter

Wash and dry fish thoroughly. Mix crab meat, bread crumbs and 1/2 cup Newburg sauce. Place spoonful of stuffing on each fillet; roll up firmly and place small end down on foil-lined pan. Sprinkle with salt and paprika. Dot with butter.

Bake at 350 degrees until fish flakes easily when tested with fork, approximately 20-30 minutes. Heat remaining Newburg sauce. Pour over fish on serving platter and serve immediately. Serves 6.
