ZUCCHINI-CARROT CAKE | |
2 eggs 1 c. sugar 2/3 c. oil 1 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. nutmeg 1/2 tsp. salt 1 c. grated carrots 1 c. grated zucchini 1/2 c. chopped walnuts 1/2 c. raisins Beat egg with sugar; add oil. Add dry ingredients. Beat well, stir in carrots, zucchini, walnuts and raisins. Pour in well-greased 9-inch pan. Bake at 350 degrees for 35 minutes. |
