SKILLET LASAGNA 
12 lasagna noodles
8 oz. Mozzarella cheese, shredded (2 c.)
1 c. Ricotta cheese
1 egg, slightly beaten
2 tbsp. grated Parmesan cheese
1 tbsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper
3 sm. zucchini, shredded
1 tsp. olive oil
1 jar (14 oz.) prepared spaghetti sauce

Prepare noodles as package directs. In large bowl combine Mozzarella cheese, Ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt and pepper. Set aside. In large skillet, saute zucchini in oil about 3 minutes. Remove from skillet. Stir in cheese mixture, drain noodles, spread 1/4 cup cheese mixture onto noodles. Roll up. Place in same skillet repeat with all the noodles and cheese mixture. Add spaghetti sauce. Cover and cook 10 minutes or till thoroughly heated.
