SENATE BEAN SOUP | |
1 lb. dried beans (navy, pea, or great northern) Water 1 meaty ham bone 3 medium potatoes, peeled and diced 1 large onion, chopped (1 c.) 1 c. diced celery 1 garlic clove, minced Salt and pepper to taste This is scaled down for home cooks. In large kettle soak beans overnight in 2 quarts of water. Next morning add 2 more quarts. Add ham bone, bring to a boil and skim fat. Cover, then simmer 2 hours or until beans fall apart. Add potatoes, onion, celery, and garlic and simmer 1 hour longer. Remove bone and cut up meat. Season. Makes 4 quarts. |
