PHILLY SAUSAGE & PEPPERS 
2 lbs. fresh sausage, cut 5 inches long
1 yellow bell pepper, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 lg. onion, sliced
1/2 tbsp. oregano
Salt & pepper
1 clove chopped garlic
1 c. red wine
1/2 tbsp. olive oil
1/2 tbsp. olive oil

Add 1/2 tablespoon olive oil to hot saucepan. Add sausage, brown a little then add red wine. Place lid over saucepan. Let sausage steam. Saute for 5 to 8 minutes. Remove sausage and drain off liquid. Add peppers and onion, the other 1/2 tablespoon olive oil and fry and stir then steam with lid over pan 5 minutes. Add salt and pepper, garlic and oregano. Put back red wine liquid and sausage. Keep stirring about 10 minutes. Serve on good roll or Italian bread.
