ENGLISH TOFFEE SQUARES 
1 c. (1/2 lb.) butter, softened
1 c. sugar
1 egg
2 c. all purpose flour
1 tsp. ground cinnamon
1 c. chopped pecans or walnuts

Beat butter and sugar until creamy. Separate egg. Beat yolk into butter mixture; cover and reserve white.

In another bowl, stir together flour and cinnamon; add to butter mixture, using your hands if necessary to blend thoroughly.

With your hands, spread dough evenly over bottom of greased 10 x 15 inch, rimmed baking pan. Beat egg white lightly, then brush over dough to cover evenly. Sprinkle pecans over top, press in lightly. Bake at 275 degrees for 1 hour or until firm when touched. While still hot, cut into 1 1/2 inch squares. Let cool in pan on rack. Store airtight. Makes about 6 dozen.
