SPINACH CASSEROLE 
2 pkgs. frozen chopped spinach
1 egg
1 can cream of mushroom soup
1 pkg. (6 oz.) shredded Cheddar cheese
Ritz crackers/butter

Defrost and drain spinach. In casserole dish, beat egg, add spinach, soup, and cheese. Mix together and top with Ritz crackers and melted butter mixture. Cook covered 20 minutes. Uncover for 10 minutes. Bake 350 degrees oven.
