RED RICE WITH SAUSAGE 
5 slices of bacon
3/4 c. ketchup
1 med. onion, diced
2 1/2 c. rice, uncooked
1 1/2 lbs. smoked sausage
2 (16 oz.) cans tomatoes, cut up
Pinch of thyme, basil and oregano

Fry bacon and set aside. Cut sausage in 3 inch pieces, sliced lengthwise. Brown sausage in bacon grease. Remove sausage and drain grease except for 1 tablespoon for sauteing the onions. Combine crumbled bacon and sausage (sliced in small pieces), tomatoes, ketchup and spices in a 4 quart pot. Bring to a boil and add rice, stirring constantly for approximately 5 minutes. Turn temperature to warm and simmer covered for approximately 45 minutes. DO NOT remove cover or stir for the first 30 minutes.
