FRUIT MUESLI 
2 med. Golden Delicious apples (about 1/2 lb. total)
1 c. pitted prunes
1 3/4 c. water
2 c. regular rolled oats
2 tbsp. honey
2 tbsp. lemon juice
1/2 tsp. ground cinnamon
Lowfat (2%) milk or yogurt
Toppings (suggestions below, optional)

TOPPINGS: Offer chopped nuts, such as almond, pecans, walnuts, and peanuts; or sliced or whole fruit, such as banana, pineapple, oranges, and berries.

Core apples and cut into chunks. In a blender or food processor, whirl apples, prunes, and water, scraping container sides often, until fruit is finely chopped. Pour into a bowl; stir in oats, honey, lemon juice, and cinnamon. Cover and refrigerate for at least 8 hours or up to 1 week.

Spoon muesli into bowls and add milk. Offer toppings, if desired. Makes about 10 servings, 1/2 cup each.

This moist, homemade muesli is rich in fiber and wholesome ingredients. It keeps for up to a week in the refrigerator, add your favorite healthful toppings.
