Pinto beans Ham hocks, pork skins Onion Garlic Oregano, cilantro Salt Beer Onions to taste Red chili powder Fresh or canned jalapenos Refried lard Any cheese Chorizo (Texas type, not California) Regular pinto beans take about 4 hours cooking time. At first boiling add ham hocks or pork skins and one can of beer. Second boiling add more beer and other additives. Salt to taste. Refried: Taste is very important. As any Mex-Tex knows the more beans are refried the better they are. Add cheese and chorizo to personal taste. Remove hocks, mash beans with grated cheese. Store in refrigerator and reheat in fry pan. |
