A GOOD PRUNE CAKE | |
4 eggs (whole), break in mixer and beat well Add 2 cups sugar, 1 cup Mazola oil; beat at medium speed. Add sifted ingredients: 1 tsp. cinnamon 1 tsp. cloves 1 tsp. nutmeg 1 tsp. salt Add these dry ingredients alternately with 1 cup buttermilk in which 1 teaspoon baking soda is dissolved. Add 1 cup cooked, chopped prunes and 1/2 cup pecans (chopped). Bake 45 minutes in 325 degree oven in a 12 x 15 inch pan (oiled slightly). TOPPING SAUCE: 1 stick butter 1 c. sugar 2 tsp. vanilla 1/2 c. buttermilk in which 1/2 tsp. baking soda has been dissolved Boil all 1 minute. Start this when you put cake in the oven. While cake is still hot, cut squares (not all the way through). Pour this sauce over so it will penetrate these cut squares. |
