SOPAIPILLAS 
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. shortening
3/4 c. hot water (120 degrees)
Garnishes: Honey or 1/2 c. sugar & 1/2 tsp. cinnamon

Combine flour, baking powder and salt; cut in shortening. Add water, stirring with a fork until blended. Turn out dough onto a lightly floured surface and knead 10 to 12 times. Place the dough in a plastic bag to rest for 20 minutes. Roll dough to 1/8 inch squares. Cut each square in half diagonally to form 2 triangles.

Pour oil to depth of 3 inches into a large Dutch oven; heat to 360 degrees. Fry a few triangles at a time in oil, lightly pressing down with the back of a fork until dough starts to puff. Release and continue cooking until golden brown, spooning oil over top of triangles and turning once. Drain. Yield: 28.
